The new craze around the fitness town has been protein pancakes. Everyone seems to have their own perfect recipes, but everytime I’ve tried, I end up with failure pancakes. Too mushy, too dry, too healthy-tasting (read: no flavour). So I decided to try and experiment with my own recipe (one of my fave things to do in the kitchen!)
This was my first try and they were not bad at all! I don’t think I’ve perfected it, but it was a great first try! And with 5 ingredients that I already had in my kitchen? Totally worth it!
The measurements are a ball-park idea. You can add more or less of any of them depending on your taste. (Click ‘Read More’)
First, mush up the banana in a bowl with a fork. Then mix the wet ingredients first (egg, yogurt) and then the dry ingredients (oats, protein powder). Super simple.
The consistency will look like this (a lot like regular pancake batter). Then just cook it like a regular pancake – flip when the bubbles start to to appear.
This recipe made me 3 small pancakes, which was perfect for breakfast with a side of fruit (not pictured). It wasn’t as fluffy as I would have liked, but that’s the beauty of experimenting! Do you have a suggestion on how I can make it fluffier? (And still healthy?)
